If I was to purchase aftermarket wheels, would the offset have to match the stock wheel offset of 50mm? What kind of wiggle room is there if any? Maybe 40mm offset? I do know that the bolt pattern must match haha! Thanks for any help!

10mm is nearly half an inch. Ideally you will use the same offset, although a larger offset can be compensated with a spacer to make up the difference.
Altering the offset will change the scrub radius, which can have an adverse effect on handling and braking forces on the suspension. Randomly changing the wheel offset is not something I would do if you care about how the car handles and behaves under braking.

Ok thanks for the input. I was looking at those American Racing Torqthrust M's. I think they would look awesome but the offset is 0mm so I'm guessing I couldn't make them work.
I think anything above +35mm, you're fine without them sticking out too far.
There's several calculators out there that will tell you how much over stock a wheel will stick out even with tires, then just go out and measure roughly where the new setup will be. Just search wheel size calculator online.

Negative. You need 5x114.3 as a bolt patern. Otherwise I would say everything else looks good.

5X4.5 / 5X114.3 is correct.
Exact offset you are going for will change with wheel width. A wider wheel will require a more positive offset for correct fitment.
You're looking for wheels that are considered "high positive offset" for proper fitment.
If you shop for wheels for a 2005-2009 mustang you'll find the wheels sized to fit ideally.
