So when I bought my Marauder, the dealership (not a Ford dealership) had done an oil change. I'm almost positive that they didn't put a Motorcraft oil filter on it. Would this cause any gaskets to fail, like the filter adapter gasket?

No, it would not. However, most other oil filters do not have an internal check valve which causes an excessive amount of time at crank for oil pressure to build back up and usually results in a start up rattle or knock that will eventually lead to timing chain tensioner failure.
Both the timing chain tensioner failure and a leaking oil filter adapter gasket are very common issues on marauders.
