Why would one have stainless steel headers ceramic coated other than to lower the temperatures and since stainless steel doesn't rust or can they rust ?

They shouldn't rust, I think it depends on the grade of satinless steel that is used. The ceramic coating also keeps the exhaust gases hotter so they scavenge better.

Stainless STAINS LESS.
SS WILL rust if the conditions are right, depending on the grade of Stainless.

The ceramic coating prevents against color change as well as lower the temps. If you don't get them coated, they'll turn purplish/copperish color a few minutes after you start the car.

In addition to the other advantages mentioned ..... Esthetics; besides faux chrome you can chose from several colors.

Another plus is ceramic coating sends the heat down line better, lighting off the cats so no CEL.
