I have a Ford ESP warranty and want to stay on top of the maintenance so that any possible future claims can not be denied for lack of maintenance.
I noticed the owners manual supplement says oil & filter changes every 5k miles but the Ford website says 15k miles and neither of the charts give a time interval.
Besides oil changes it looks like the only other items that I would have to show proof of changing is the air & fuel filters at 30k, 60k & 90k.
Any thoughts on this?

I would not go past the 5000 mark without an oil analysis. Check with RF OverLord. He's the Lubrication Guru of this website.

Shelby, can you provide a link to where Ford says 15k for oil changes? That has got to be a typo...
I would go no more than 5k and use Motorcraft 5W-20 and Motorcraft filters until the warranty is up.
