what affect on engine performance will happen by changing to a 180 degree stat... from stock

Very little all by itself.
With a tune and cooler spark plugs you might be able to run a little more timing before you encounter detonation and the knock sensor retards timing.
The OEM Stat is 188 degrees - I haven't seen a replacement stat stamped higher than 180 degrees for this car.

By itself, a thermostat change isn't worth the effort. You'll see no detectable performance increase, and may even see a decrease in fuel economy.

On a stock Marauder a lower temp thermostat might fool the computer and you may get lower gas mileage.

Putting in a lower thermostat is no guarantee that the engine will run cooler.

You want your engine to run hot because it will burn off any junk in your engine, meaning you will have less deposits.

A lower temp thermostat is old school, unless you are using the car for drag racing, even then guys who drag race usually use a 160 thermostat.

You will notice very little going with a 180 stat.
would not recommend anything lower for a street car.
Anything cooler would be for racing and many racers
take them right out because they run the cars so hard.
As Marylandrauder suggests carbon build up with a cooler stat
will become a problem.
