OK OK! I got the hint. There has been a lot of demand....I mean requests for the wifie's bean salad that she brought out on Saturday to Carlisle. As the title states (I renamed it, she can reprimand me later)...
2 Cans black beans, drained
2 Cups frozen corn, thawed and drained
Chopped red & green peppers
2 Bunches scallions, chopped
2 Cups fresh salsa
1 tsp cumin
1 Tbsp grated fresh ginger root
Zest & juice of 1 lime
Salt & pepper to taste
1/4 - 1/2 tsp chipotle powder (optional)
Stir all ingredients together. Best made the day before serving.
