There should be VIN stickers on several of the body parts- ie trunk, hood, maybe even doors. There is also likely a "buck tag" that should be stapled to the front rad support somewhere that would have the VIN stamped in in from the body shop at the assembly plant.
Also, if he switched VIN plates on the dash it is highly unlikely he would have the "correct" rivets to secure it to the dash. DOT rivets have little "smilies" cut out of the rivet heads all the way around (look real close at yours if you need a better visual) and you can't buy those just anywhere or without proper credentials.
There aren't any VIN codes stamped in the frame. The only other thing you could do is get serial numbers off the airbags and have them cross checked through the DOT to the VIN. Those are required by law to be recorded my the manufacturer as built so the data has to be available somewhere.

My Brother was a Copper and always said the VIN is stamped in all sorts of places that the common folk do not know about.
My Legal Council agrees.

I stamped the Vin on the cross member, that way if someone switches it I will know..

That is correct. But i can tell you that there is no VIN # on that cross-member. The body parts, header panel, fenders, hood, bumper cover, doors, trunk lid all have them, the stickers are easily identifiable.
There are hidden #'s throughout the car though.
