Do one side at a time. Use the other side as a reference. Take pictures.

Do one side at a time & you will always have a reference and won't be abler to screw it up! ;)

There is an adjustable spacer, which determines the diameter of the parking brake shoes, that you need to set. If it's adjusted too long, you won't be able to get the rotor/drum over the brake shoes or the drum will rub the shoes while driving. If it is adjusted too short, you'll be able to push the p-brake pedal all the way without engaging the p-brake shoes. This adjustable spacer has a star-shaped adjusting 'nut' on it, and there is a 'window' in the backing plate that is normally covered with a rubber grommet. When fully assembled, you can access the star-adjuster by removing this rubber grommet and using a flat-blade screwdriver or similar implement to rotate the star in one direction or the other (slowly, one notch at a time). It's much easier to adjust when the rotor is removed.
The manual say to use a large gauge to measure the inside diameter of the drum, then use that to set the initial diameter of the p-brake shoes. Without such a tool, you can use trial and error. Try setting the diameter too big so the rotor won't fit over the brakes, then reduce the diameter until the rotor fits easily.
This might sound complicated, but it's really not. Sorry, I have no pics. Study what I've written, and when you go to do it, you will see the light and everything will fall into place :)

Hey thanks guys! Put on my new parking brake shoes this morning it was pretty easy. The only kinda hard part was getting the springs back in but I got it. Now the only thing I have left to do is make adjustments because the shoes aren't really gripping. But I think its more of the cable that needs to be adjusted because when I push the brake down it feels kinda loose?

The parking brake is adjusted properly when you hear or feel a slight drag when spinning the out the rotors.
No need to adjust the parking brake cable.
