Will a 20"x10" wheel with a 35mm offset fit the rear without having to do anything special? I saw a set of Carroll Shelby CS70 wheels in chrome that I am interested in.

Only one way to find out! it will prolly fit, question is will you like the offset??

Yes it will fit, very well actually. The fun part is picking out the tires and that is a pain in the azz; so I will save you some time. 275/40 fit very well and cup in a bit. 285/35's are about a far out as you can go without rubbing if you want to lower your rear much. The tire is pretty much straight up and down with most brands but with the 35 profile you lose a lot of side wall and if you are going with a 40 up front that tire will have more height than the rear. I haven’t found anyone who makes a 285/40 but it would be a perfect size. A 295 will fit with that offset but if you hit a hard bump or lower it at all you *could possibly* rub the fender and the inner tub.

They have photos of them on the site, you just have to do a little navigation to get there

It will fit I have a very similar setup with a 20x10 45mm rim with 315/35/20 in the rear.
