Ideas on a day and time? I'm thinking Tuesday's from 7pm CST through 9pm CST. That should cover most of the country...

Sounds good to me. I would suggest weekends if I was always near a computer during that time, but I'm not... So Mon-Thur would HAVE to be a must.
