If I put 275/35/18 on my rear and 255/40/18 on the front would it be a big difference in height being as though its 35 in the rear (middle #) and 40 in the front??

Rear tires would be shorter than front. T/C won't like that at all if you have T/C

Do 255/40 on the front and 265/50 on the rear. No TC or rubbing issues. 265/50 is 709 revs per mile if you need to adjust your speedometer.
The middle number (aspect ratio) is a % of the width.
Front 40% of 255 is 102
Rear 35% of 275 is 96.25
The combo I listed above in my first sentence is
Front 40% of 255 is 102
Rear 50% of 265 is 132.5
