How long does it take to complete the monitor cycle for all monitors? I have driven about 270 miles and I still have two incomplete. The Evap and one other I can't remember. I thought it was supposed to be like 100 miles?

The other monitor that need to cycle yet is the catalyst monitor.
I also just found this

I've never had to drive that far to get it to complete it's cycle. My son's Taurus likes to throw a EGR code from time to time, usually just before it's time for the test. It usually only takes about 5-6mi before they all show complete w/o doing any particular type of driving other than taking it on the freeway after it is up to temp.
The EVAP does need ambient temp in a certain range, but even then if there are multiple trip cycles in that temp range it should show complete.

At work I've found that to help set EVAP quicker...what seems to work almost every time is to have between a quarter and three quarter tank of gas, and leave it parked for at least an eight hour parked period without starting the engine. Then take it out for a moderate drive without shutting it off. Having a OBD scanner plugged while driving that has the capabilities to show monitor status helps.
The cat monitor needs some mixed driving ending with highway miles not exceeding 55-60 MPH. Some cars set the cat monitor within a 20-30 minute drive, but some take a lot longer for reasons unknown.
I've also seen some cars respond well to clearing the OBD while driving in the highway after 10-15 minutes of driving.
