For most Eaton swaps, the 2600 is fine. If you're going 500+, 3000. This has some info on MAFs:

You will not outflow as how BA2600 with a Eaton M112 blower. Going bigger doesn't help, it costs on accuracy.

Use a Lightning meter. Great tunability.

I did... Had to use a 2800. Yeah, I know, I did find some others out there that had the same issue though. Even with a 2800, my MAF counts are in the high 800 range.

Yup! If you don't need bigger, don't go bigger. If you stay within the range of what you'll actually be using for airflow, the resolution of the tune will be better.

I just put in a ba5000. I had to change the MAF harness and had to modify the intake tube to mount it.

It's a bit more work - I might recommend it if you have a snail-style blower, but if you're running a roots, just use a BA2600-3000 and call it done.
