I’m trying to decide if I want to bolt up the stainless works headers to my stock exhaust or go ahead and build a 3” exhaust from headers out. Those of you that have done that, can you give me details and cost?

I typically buy the Speedway motors exhaust kits. Done them on a few rock crawlers, my jeep, and my car.

I didn't put a tailpipe on my car. It has a turn down after the muffler. But it also has a boost referenced loud valve near the front.
I imagine packaging 3" tailpipes around around the watts links and air bags is a bastard. I had previously used the impala ss 2.5" tailpipes slightly modified to fit.

A couple of members have done a real nice job with their exhaust system. These may help you:

If your NA no down fall.
SC'ed is another story.
The stock midpipe necks down to 1-7/8"

I would.....
There is another area that necks down to 1-7/8" too.
Just before and just after the mufflers.... Inlet/outlet

Unless your plan is to make a lot of boost you should be OK with a 2.5" mid pipe.
The over the axle section is 2-1/4"

I would think you'd be ok with 2.5" mid pipe, 2.5" mufflers and stock tailpipes. If you're on a budget that'd be the way to go since you have the parts already.
You "feel" the difference because you want to "feel" the difference. Since you just spent money on the upgrade you "have" to feel the difference
I'm looking to eliminate the double pump process I have to follow right now to get the pedal hard
