Why does a centrifugal belt slip? Is the belt too large? Would a smaller belt eliminate this problem? I've seen the anti slip pulleys, do they fix the problem 100%? Just trying to understand things. I'm not blown...yet.

Usually they slip if the belt itself is worn/glazed or the owner has put on a different pulley then what came with the kit.

Slip is the result of having a pulley too small for the belts surface area.
Usually over 10psi on a 6 rib and you will start to have slippage.
Wear/Tear is due to improper alignment. One washer makes the difference.
