351W stroker or Gen 3 Coyote?

I'm now planning the 'restomod' build for my long ignored '85 Mustang GT 5.0.
It will be getting a full Maximum Motorsports suspension along with a big brake set-up.
Also will be installing a Tremec Magnum 6 speed with aluminum driveshaft and a full 3" exhaust.

Originally my thought was to install a built 351W stroker motor....
Then, I read about the new 460HP Gen 3 Coyote crate engine and was sure that I would use that as a powerplant.
With headers, a tune and E85 the new Coyote can make 500 RWHP.

    But....now, I'm leaning back to a 427W making 580 HP/560 TRQ.

Both engines will cost within $500 of each other.

    What do you guys say:
Big cube, roller cammed pushrod thumper with a 4bbl carb?....or 5.0L DOHC Ti-VCT screamer with FI/DI?

I would go for technology just because of great drivability. I’d rather be cursing around, long trips and such in a nicely tuned fuel injected high revving machine. I’m assuming the Coyote is lighter too.

I'm not sure which is more or less expensive, but you can always throw on aftermarket EFI on that 427w if driveability is your concern. That may shift the balance of cost but probably not by too much. I may be against the grain here, but I'm currently refreshing a SBF stroker to replace a 32v 4.6 in my '65 Mustang so I'm not afraid to go "backwards". I will more than likely go with FiTech or something similar as opposed to a carb, but currently I'm not ruling anything out. Looking at your sig this won't be your daily driver, so I think it comes down to budget and personal preference

Also, I love the Eagles and enough of Joe Walsh's solo stuff...assuming your SN isn't just a coincidence.

With all the issues I've been seeing from gen 3 coyote owners on the 6th gen mustang forum, I would stick to the gen 2 if anything. Besides, do you really want to deal with setting up direct injection on an old car?

Can't do that....I already modded it 30+ years ago!
Bonestock it ran 14.85s at 93 mph
With these mods it ran 13.50s at 102mph*:
    3:55 8.8" Rear
Ported '87 fuelie heads with a mild cam
Shorty headers with 'off-road' H pipe
    Underdrive pulleys
Reworked and rejetted OEM 600cfm 4 barrel.
    Edelbrock intake manifold.

    * That was a quick time back in the mid 80s.
It would run heads up with modded 5.0 fuelie Mustangs and embarass 5.0 AND 5.7L IROC-Zs....
It would even whip my best friend's '86 Grand National.....
    until I hit 3rd gear.....
and then he would walk on by, like I had just dropped anchor....lol.

(The hood wasn't latched in these pictures)

Hoosier street drag radials got her hooked up!

Hemmed and hawed about the LS angle, but have to admit it has impressive numbers. It looks pretty sweet too.

Buddy of mine did a F. I. 96 351w in his early Bronco and made it disturborless. It was pretty sweet. He had it dialed in nicely.
